Baking

As Crankylitprof reminds us, it is the season for baking.  As Brigid reminds us, there is a reason why forensic people aren’t asked to make cookiesginger_man.  There you go.

Today and yesterday I made toffee.  An simple concoction of 1/4 C water, 1 C butter and 2 C sugar.  Put them all in a heavy-sided saucepan.  Combine over medium heat.  Cover for 2-3 minutes to let the crystals wash off the sides of the pan, then insert candy thermometer and heat until it reaches hard crack stage. 

Stand on the warm stove and stare into the bubbling mixture, looking like the surface of a forbidden planet.  Realize that if any of that got on your hands, you’re in for a trip to the burn unit.  Smell the comination of butter and caramelizing sugar.

Then pour it into a buttered pan, wait for a little while, and spread the top with chocolate chips and slivered almonds.  If you want to go whole hog, you can put the almonds (or other nuts) in the toffee itself.

    That sounds pretty good. I may have to ask my wife permission to use the kitchen and try that one.

    The only thing I make for the holidays is the traditional Chex Mix from the recipe on the cereal boxes. The only variances are I use the whole stick of butter vs. only 3/4’s of it,I use only cashews vs. mixed nuts and I add extra pretzels vs. bagel chips. Oh, I use pretzel sticks vs. the “bite size” they call for. The original seasonings are still the best.

      No, no fudge. This weekend it’s apple cider syrup and chocolate covered pretzels.
